corrections

Because our cookbook is homemade... it is not perfect :)

We have discovered some corrections that need to be made to some of the recipes in the book. Please see the corrections posted and accept our apology for the inconvenience. 

Peanut Butter Bars, pg. 202
Let cool for 10 minutes before spreading with 1 cup peanut butter. When cooled completely, frost with chocolate frosting. 
Chocolate Frosting:
1/2 cup butter, softened
1/3 cup cocoa
1 2/3 cups powdered sugar
1/3 cup evaporated milk

Combine butter and cocoa until well mixed. Then add evaporated milk and powdered sugar until smooth and creamy.

Double recipe for 9x13 pan

Summer Potato Salad, pg. 54

Boil potatoes for 30 minutes or until tender when pierced with a fork.  Leave skins on, cool and slice

Broiled Tilapia Parmesan, pg. 127
Please use these instructions to assemble and cook:
Preheat broiler. Line a broiling pan with aluminum foil. In a small bowl mix parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion pepper and celery salt. Mix well and set aside. Place filets in a single layer on broiling pan. Broil a few inches from the heat for 2 to 3 minutes. Turn filets over and broil for 2 more minutes. Remove from oven and coat with parmesan mixture on top side of filets. Broil for 2 more minutes, or until the topping is golden brown and fish flakes easily with a fork. Be careful not to overcook. Serve immediately.
